APPLE PECAN CAKE WITH CARAMEL GLAZE

Certainly! Here’s a delicious recipe for an Apple Pecan Cake with Caramel Glaze:

Ingredients:

For the Cake:

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 2 cups finely chopped, peeled apples (e.g., Granny Smith or Honeycrisp)
  • 1 cup chopped pecans

For the Caramel Glaze:

  • 1/2 cup unsalted butter
  • 1 cup brown sugar, packed
  • 1/4 cup whole milk
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions:

For the Cake:

  1. Preheat your oven to 350°F (175°C). Grease and flour a bundt pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
  3. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream. Begin and end with the dry ingredients. Mix until just combined.
  6. Fold in the chopped apples and pecans.
  7. Pour the batter into the prepared bundt pan and smooth the top.
  8. Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

For the Caramel Glaze:

  1. In a saucepan over medium heat, melt the butter.
  2. Stir in the brown sugar and cook for 2 minutes, or until the sugar has dissolved.
  3. Add the milk, vanilla extract, and a pinch of salt. Bring the mixture to a simmer and cook for an additional 2-3 minutes, stirring constantly.
  4. Remove the saucepan from heat and let the caramel glaze cool for a few minutes.
  5. Drizzle the caramel glaze over the cooled apple pecan cake.
