Almond Cake

Here’s a simple recipe for a delicious almond cake:

Ingredients:

  • 1 cup (200g) granulated sugar
  • 1 cup (225g) unsalted butter, softened
  • 4 large eggs
  • 1 teaspoon almond extract
  • 1 1/2 cups (180g) all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (120ml) milk
  • 1/2 cup (60g) almond flour (ground almonds)
  • Sliced almonds for topping (optional)
  • Powdered sugar for dusting (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
  2. In a large mixing bowl, cream together the sugar and softened butter until light and fluffy.
  3. Add the eggs, one at a time, beating well after each addition. Stir in the almond extract.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, salt, and almond flour.
  5. Gradually add the dry ingredients to the creamed mixture, alternating with the milk. Begin and end with the dry ingredients, mixing until just combined. Be careful not to overmix.
  6. Pour the batter into the prepared cake pan and spread it evenly.
  7. If desired, sprinkle sliced almonds over the top of the batter.
  8. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  10. Once cooled, you can dust the top of the cake with powdered sugar for a decorative touch, if desired.
  11. Slice and serve the almond cake on its own or with a dollop of whipped cream or a scoop of vanilla ice cream.
