Ingredients:

  • 1 zucchini, sliced
  • 1 yellow bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 small eggplant, diced
  • 1 cup cherry tomatoes, halved
  • 1 red onion, sliced
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Optional: Feta cheese, crumbled, for garnish
  • Optional: Fresh parsley, chopped, for garnish

Instructions:

  1. Preheat your air fryer: Set the air fryer to 375°F (190°C) and let it preheat for a few minutes.
  2. Prepare the vegetables: In a large mixing bowl, combine the sliced zucchini, yellow bell pepper, red bell pepper, diced eggplant, cherry tomatoes, and sliced red onion.
  3. Season the vegetables: Drizzle the olive oil over the vegetables and add minced garlic, dried oregano, dried thyme, salt, and pepper. Toss the vegetables until evenly coated with the seasonings.
  4. Air-fry the vegetables: Place the seasoned vegetables in the air fryer basket in a single layer. You may need to cook them in batches, depending on the size of your air fryer. Cook for about 12-15 minutes, shaking the basket or stirring the vegetables halfway through to ensure even cooking. The vegetables should be tender and slightly browned.
  5. Garnish and serve: Once the vegetables are done, transfer them to a serving dish. If desired, garnish with crumbled feta cheese and fresh chopped parsley.
