Here’s a bold and addictive Dan Dan Noodles recipe — packed with spicy, savory, and nutty flavors that hit every craving:


🔥 Addictive Dan Dan Noodles (Sichuan-Style)

🥢 Ingredients

Sauce Base:

  • 3 tbsp Chinese sesame paste (or tahini + 1 tsp sesame oil)

  • 2 tbsp soy sauce

  • 1 tbsp Chinkiang black vinegar

  • 1 tbsp chili oil (plus more for drizzling)

  • 1 tsp sugar

  • 1 garlic clove, grated

  • 1 tsp grated ginger

  • ½ tsp Sichuan peppercorns, ground (optional but traditional)

  • 2 tbsp hot noodle water (to loosen the sauce)

Noodles & Topping:

  • 250g (9 oz) Chinese wheat noodles (or spaghetti)

  • 200g (7 oz) ground pork or chicken

  • 1 tbsp light soy sauce

  • 1 tsp Shaoxing wine (optional)

  • ½ tsp five spice powder

  • 1 tbsp oil

  • 2 green onions, chopped

  • 2 tbsp roasted peanuts or crushed sesame seeds (optional)

  • Blanched baby bok choy or spinach (for topping)


🔪 Instructions

  1. Make the Sauce:

    • In a bowl, whisk together all sauce ingredients until smooth. Set aside.

  2. Cook the Noodles:

    • Boil noodles according to package instructions. Reserve a few tablespoons of hot water before draining.

    • Add a splash of oil to prevent sticking.

  3. Sauté the Pork:

    • Heat 1 tbsp oil in a pan over medium heat.

    • Add garlic, ginger, and ground meat. Cook until browned.

    • Add soy sauce, Shaoxing wine, five spice powder, and cook until caramelized and slightly crispy.

  4. Assemble:

    • Add sauce to the bottom of each bowl.

    • Top with hot noodles, stir to coat.

    • Add the savory meat, greens, green onions, and a final drizzle of chili oil.

  5. Garnish:

    • Sprinkle with peanuts or sesame seeds for crunch.
