Ingredients:

For the Crepes:

  • 4 oz (113 g) cream cheese, softened
  • 4 large eggs
  • 1 tsp vanilla extract
  • 2 tbsp almond flour
  • 1 tsp sweetener (such as erythritol or stevia), optional
  • Pinch of salt

For Filling and Topping (optional):

  • Berries (strawberries, blueberries, raspberries, etc.)
  • Whipped cream (unsweetened)
  • Chopped nuts (e.g., almonds, walnuts, or pecans)

Instructions:

  1. In a blender, combine the cream cheese, eggs, vanilla extract, almond flour, sweetener (if using), and a pinch of salt. Blend until the mixture is smooth and well combined. Let the batter rest for a few minutes to allow the almond flour to absorb some moisture.
  2. Heat a non-stick skillet over medium-low heat. You can lightly grease the skillet with a small amount of butter or cooking spray if needed.
  3. Pour a small amount of the batter into the skillet and swirl it around to form a thin crepe. Cook for about 1-2 minutes on one side, or until the edges start to lift slightly and the bottom is golden brown.
  4. Carefully flip the crepe using a spatula and cook for an additional 1-2 minutes on the other side. Repeat the process with the remaining batter, making sure to stir the batter before pouring each crepe.
  5. Once all the crepes are cooked, you can fill them with your desired fillings. Some options include a dollop of unsweetened whipped cream and fresh berries, or chopped nuts with a sprinkle of cinnamon.
