Special Fruit Pavé Recipe
Ingredients
For the Base:
- 200g (7 oz) digestive biscuits or graham crackers
- 100g (3.5 oz) unsalted butter, melted
For the Cream Layer:
- 400ml (14 oz) heavy cream
- 250g (8.8 oz) cream cheese, softened
- 100g (3.5 oz) powdered sugar
- 1 tsp vanilla extract
- Zest of 1 lemon
For the Fruit Layer:
- 300g (10.5 oz) mixed fresh fruits (such as strawberries, kiwis, blueberries, and mango)
- 2 tbsp honey or maple syrup (optional)
- Mint leaves for garnish (optional)
Instructions
- Prepare the Base:
- Preheat the oven to 180°C (350°F) if you want to crisp the base slightly (optional).
- Crush the digestive biscuits in a food processor or by placing them in a ziplock bag and crushing them with a rolling pin until fine.
- Mix the crushed biscuits with the melted butter until well combined.
