Instructions
1. Make the Pie Crust:
- In a large bowl, mix the flour, salt, and sugar.
- Add the diced butter and mix until the mixture resembles coarse crumbs.
- Stir in ice water, one tablespoon at a time, until the dough comes together.
- Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.
2. Prepare the Apple Filling:
- Peel, core, and slice the apples.
- In a large bowl, combine sliced apples with sugar, flour, cinnamon, nutmeg (if using), lemon juice, and vanilla. Toss until well coated.
3. Assemble the Pie:
- Preheat the oven to 425°F (220°C).
- Roll out one dough disc on a floured surface to fit your pie dish. Place it in the dish.
- Fill the crust with the apple mixture, mounding it slightly in the center.
- Roll out the second dough disc and place it over the filling. Trim excess dough, then crimp edges to seal.
- Cut slits in the top crust to allow steam to escape.

- Beat the egg with the milk to create an egg wash and brush it over the crust.
