Here’s a delicious recipe for Gooey Mozzarella Biscuit Bombs that’s perfect for a snack or appetizer!

Ingredients

  • For the Biscuit Dough:
    • 2 cups all-purpose flour
    • 1 tablespoon baking powder
    • 1 teaspoon salt
    • 1/4 cup cold butter, cubed
    • 3/4 cup milk
  • For the Filling:
    • 8 ounces mozzarella cheese, cut into small cubes
    • 1 teaspoon Italian seasoning (optional)
    • 1/2 teaspoon garlic powder (optional)
  • For Topping:
    • 1/4 cup melted butter
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon dried parsley (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Make the Biscuit Dough: In a large bowl, whisk together the flour, baking powder, and salt. Add the cold butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs. Stir in the milk until just combined.
  3. Prepare the Filling: In a small bowl, combine the mozzarella cheese, Italian seasoning, and garlic powder.
  4. Assemble the Bombs:
    • Turn the biscuit dough onto a floured surface and knead it gently a few times until smooth.
    • Roll out the dough to about 1/2 inch thick and cut it into circles (about 3 inches in diameter).
    • Place a cube of mozzarella filling in the center of each circle. Fold the edges over the cheese and pinch to seal, forming a ball.
  5. Bake: Place the biscuit bombs on the prepared baking sheet. Bake for 15-20 minutes, or until golden brown.
  6. Prepare the Topping: While the bombs are baking, mix the melted butter, garlic powder, and parsley in a small bowl.
  7. Finish: Once the biscuit bombs are done baking, brush them with the garlic butter mixture. Let them cool slightly before serving.
