Here’s a delicious recipe for meatloaf with mashed potatoes and cheese:

Meatloaf

Ingredients:

  • 1 lb ground beef (or a mix of beef and pork)
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup milk
  • 1/2 cup ketchup (plus extra for topping)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 tsp Worcestershire sauce
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the ground meat, breadcrumbs, Parmesan cheese, milk, 1/2 cup ketchup, onion, garlic, egg, Worcestershire sauce, oregano, salt, and pepper. Mix until well combined.
  3. Shape the mixture into a loaf and place it in a greased baking dish. Spread additional ketchup on top for added flavor.
  4. Bake for about 1 hour or until the internal temperature reaches 160°F (70°C). Let it rest for 10 minutes before slicing.

Mashed Potatoes with Cheese

Ingredients:

  • 2 lbs potatoes (Russet or Yukon Gold), peeled and cubed
  • 1/2 cup milk (adjust for desired creaminess)
  • 4 tbsp butter
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • Optional: chopped chives or parsley for garnish

Instructions:

  1. In a large pot, bring salted water to a boil. Add the cubed potatoes and cook until tender (about 15-20 minutes).
  2. Drain the potatoes and return them to the pot.
  3. Add butter, milk, and cheese. Mash until smooth and creamy. Season with salt and pepper to taste.
  4. If desired, sprinkle with chopped chives or parsley before serving.

Serving

Serve slices of the meatloaf alongside a generous scoop of cheesy mashed potatoes. Enjoy your meal!
