Here’s a delicious recipe for Honey Garlic Pork Tenderloin Casserole:

Ingredients

  • For the Pork:
    • 1 lb pork tenderloin, cut into bite-sized pieces
    • 3 tablespoons honey
    • 3 tablespoons soy sauce
    • 2 cloves garlic, minced
    • 1 teaspoon ginger (fresh or ground)
    • Salt and pepper, to taste
    • 1 tablespoon olive oil
  • For the Casserole:
    • 2 cups cooked rice (white or brown)
    • 1 cup broccoli florets (fresh or frozen)
    • 1 cup bell peppers, chopped (any color)
    • 1 cup carrots, sliced
    • 1 cup shredded cheese (cheddar or mozzarella)
    • 1/2 cup chicken or vegetable broth
    • 1 tablespoon sesame seeds (optional)
    • Green onions, chopped (for garnish)

Instructions

  1. Prepare the Pork:
    • In a bowl, combine honey, soy sauce, garlic, ginger, salt, and pepper. Add the pork pieces and marinate for at least 30 minutes (or up to overnight in the fridge).
  2. Cook the Pork:
    • In a large skillet, heat olive oil over medium-high heat. Add the marinated pork and cook until browned and cooked through, about 5-7 minutes. Remove from heat and set aside.
  3. Assemble the Casserole:
    • Preheat your oven to 375°F (190°C).
    • In a large mixing bowl, combine cooked rice, broccoli, bell peppers, carrots, and the cooked pork. Stir in the broth and half of the cheese.
  4. Bake:
    • Transfer the mixture to a greased casserole dish. Top with the remaining cheese and sprinkle sesame seeds if using.
    • Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  5. Serve:
