Here’s a delicious recipe for a decadent crepe cake that’s sure to impress! This cake features layers of delicate crepes and rich filling, making it a perfect dessert for special occasions.

Decadent Crepe Cake Recipe

Ingredients

For the Crepes:

  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 cups milk
  • 2 tablespoons melted butter
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt

For the Filling:

  • 2 cups heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened

For the Chocolate Ganache (optional):

  • 1 cup dark chocolate chips
  • 1/2 cup heavy cream

Instructions

1. Make the Crepes:

  • In a mixing bowl, whisk together the flour, eggs, milk, melted butter, sugar, vanilla extract, and salt until smooth. Let the batter rest for about 30 minutes.
  • Heat a non-stick skillet over medium heat and lightly grease with butter or oil. Pour in about 1/4 cup of batter and swirl to coat the bottom of the pan.
  • Cook for about 1-2 minutes until the edges lift and the bottom is lightly golden. Flip and cook for another 1 minute. Repeat with the remaining batter, stacking the crepes on a plate as you go.

2. Prepare the Filling:

  • In a large bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
  • In another bowl, beat the softened cream cheese until smooth. Gradually fold the whipped cream into the cream cheese until well combined.

3. Assemble the Cake:

  • Place one crepe on a serving platter. Spread a thin layer of the filling on top. Repeat this process, stacking crepes with filling in between, until all crepes and filling are used.
  • Chill the assembled cake in the refrigerator for at least 2 hours to set.

4. Prepare the Ganache (optional):

  • Heat the heavy cream in a small saucepan until it just begins to simmer. Pour it over the chocolate chips in a bowl and let it sit for a few minutes. Stir until smooth and glossy.

5. Finish the Cake:

  • Drizzle the chocolate ganache over the top of the chilled crepe cake. Let it flow down the sides for a beautiful effect.
  • Slice and serve chilled or at room temperature. Enjoy!

Tips:

  • You can flavor the filling with chocolate, fruit purees, or even liqueurs to customize your cake.
  • If you want to make the process easier, you can prepare the crepes a day in advance and store them in the fridge.
