Apple and Cream Cheese Crumble Cake

Here’s a delicious recipe for Apple and Cream Cheese Crumble Cake. It combines tender apples, creamy cheese, and a buttery crumble topping.

Ingredients

For the cake:

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ cup (1 stick) unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream or Greek yogurt
  • 2 cups peeled and chopped apples (Granny Smith or Honeycrisp work well)

For the cream cheese layer:

  • 8 oz cream cheese, softened
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract

For the crumble topping:

  • ½ cup all-purpose flour
  • ¼ cup brown sugar
  • ¼ cup granulated sugar
  • ½ tsp ground cinnamon
  • ¼ cup unsalted butter, melted

Instructions

1. Preheat the oven:

  • Preheat your oven to 350°F (175°C).
  • Grease and flour an 8×8-inch (or similar size) baking dish.

2. Prepare the cake:

  • In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  • In a separate large bowl, beat butter and sugar until light and fluffy.
  • Add eggs one at a time, mixing well after each addition, followed by the vanilla.
  • Gradually add the dry ingredients to the wet mixture, alternating with sour cream, beginning and ending with the dry ingredients.
  • Fold in the chopped apples.
  • Pour the cake batter into the prepared baking dish and spread evenly.

3. Make the cream cheese layer:

  • In a medium bowl, beat the softened cream cheese, sugar, egg, and vanilla until smooth.
  • Spread the cream cheese mixture over the cake batter in an even layer.

4. Prepare the crumble topping:

  • In a small bowl, mix flour, brown sugar, granulated sugar, and cinnamon.
  • Stir in the melted butter until crumbs form.
  • Sprinkle the crumble evenly over the cream cheese layer.

5. Bake:

  • Bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean (except for some cream cheese).
  • Let it cool in the pan before slicing.

6. Serve:

  • Slice and serve at room temperature or slightly warm. It’s great on its own or with a scoop of vanilla ice cream!
