Cheesesteak Tortellini in Rich Provolone Sauce Recipe

Here’s a delicious recipe for Cheesesteak Tortellini in Rich Provolone Sauce:

Ingredients

For the Tortellini:

  • 1 package (9-12 oz) of cheese tortellini (fresh or frozen)

For the Cheesesteak Filling:

  • 1 lb beef steak (sirloin or ribeye), thinly sliced
  • 1 tablespoon olive oil
  • 1 onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 2 cloves garlic, minced
  • Salt and pepper to taste

For the Provolone Sauce:

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 1 cup provolone cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional: fresh parsley for garnish

Instructions

  1. Cook the Tortellini:
    • Cook the cheese tortellini according to package instructions. Drain and set aside.
  2. Prepare the Cheesesteak Filling:
    • In a large skillet, heat the olive oil over medium-high heat.
    • Add the sliced beef and season with salt and pepper. Cook until browned, about 3-5 minutes. Remove from the skillet and set aside.
    • In the same skillet, add the onions and bell peppers. Sauté until softened, about 5-7 minutes. Add the minced garlic and cook for another minute.
    • Return the cooked beef to the skillet, mixing everything well. Remove from heat.
  3. Make the Provolone Sauce:
    • In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes until golden.
    • Gradually whisk in the milk, stirring continuously until the mixture thickens, about 5-7 minutes.
    • Remove from heat and stir in the provolone cheese, Parmesan cheese, garlic powder, salt, and pepper until smooth.
  4. Combine Everything:
    • In a large bowl, combine the cooked tortellini, cheesesteak filling, and provolone sauce. Mix until everything is evenly coated.
  5. Serve:
    • Transfer to a serving dish or individual bowls. Garnish with fresh parsley if desired. Enjoy!
