Crockpot French Onion Meatloaf with Melted Swiss Cheese

Here’s a simple Crockpot French Onion Meatloaf with Melted Swiss Cheese recipe for you:

Ingredients:

  • 2 lbs ground beef (80/20 works best)
  • 1 envelope French onion soup mix (about 1 oz)
  • 1/2 cup breadcrumbs (plain or seasoned)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup ketchup
  • 1/4 cup milk
  • 2 eggs, lightly beaten
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/2 tsp salt (optional, as the soup mix is salty)
  • 1 large onion, sliced thin
  • 8 slices of Swiss cheese
  • 1 tbsp olive oil
  • Fresh parsley for garnish (optional)

Instructions:

  1. Prepare the Meatloaf:
    • In a large bowl, mix together the ground beef, French onion soup mix, breadcrumbs, Parmesan cheese, ketchup, milk, beaten eggs, garlic powder, black pepper, and salt (if using).
    • Combine all ingredients until well mixed, but avoid overworking the meat.
    • Shape the meat mixture into a loaf shape.
  2. Crockpot Setup:
    • Heat the olive oil in a pan over medium heat and sauté the sliced onions for about 5-7 minutes until golden and caramelized.
    • Place the caramelized onions at the bottom of the crockpot.
    • Gently place the prepared meatloaf on top of the onions.
  3. Cooking:
    • Cook on low for 6-8 hours, or on high for 3-4 hours, until the internal temperature of the meatloaf reaches 160°F (71°C).
  4. Add the Cheese:
    • In the last 10-15 minutes of cooking, place the slices of Swiss cheese on top of the meatloaf. Cover and allow the cheese to melt.
  5. Serving:
    • Carefully remove the meatloaf from the crockpot. Slice it and serve with the caramelized onions from the bottom.
    • Optionally, garnish with fresh parsley.
