Ingredients:

  • 2 cups cooked pasta (penne or rotini works well)
  • 2 tbsp olive oil
  • 1 lb boneless, skinless chicken breast (cubed)
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 1 cup carrots (diced)
  • 1 cup celery (diced)
  • 1 cup frozen peas
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/4 cup all-purpose flour
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp chopped fresh parsley (optional)

Instructions:

  1. Cook the Pasta:
    • Cook the pasta according to the package instructions. Drain and set aside.
  2. Prepare the Chicken:
    • Heat olive oil in a large skillet over medium heat.
    • Add the cubed chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. Sauté Vegetables:
    • In the same skillet, add a bit more olive oil if needed.
    • Sauté the onion, garlic, carrots, and celery until the vegetables are tender, about 5 minutes.
  4. Make the Sauce:
    • Sprinkle the flour over the vegetables and stir to combine. Cook for 1-2 minutes to remove the raw flour taste.
    • Gradually add the chicken broth while stirring to avoid lumps.
    • Stir in the heavy cream, thyme, rosemary, salt, and pepper. Bring the mixture to a simmer and cook until it thickens slightly, about 3-5 minutes.
  5. Combine Ingredients:
    • Return the cooked chicken to the skillet and stir to combine.
    • Add the frozen peas and cook for another 2-3 minutes until the peas are heated through.
  6. Mix with Pasta:
    • Add the cooked pasta to the skillet and stir to combine all the ingredients. Cook for another 2-3 minutes to ensure everything is heated through.
  7. Add Cheese:
    • Sprinkle the shredded cheddar cheese over the top and stir until melted and incorporated into the sauce.
  8. Serve:
    • Garnish with chopped fresh parsley if desired.
    • Serve hot and enjoy!
