Here’s a fun recipe for Taco Cupcakes! These savory cupcakes are great for parties, appetizers, or a fun twist on taco night. The crispy wonton wrappers serve as the “cupcake liners,” filled with your favorite taco ingredients.

Taco Cupcakes Recipe

Ingredients:

  • 24 wonton wrappers
  • 1 lb ground beef (or ground turkey/chicken)
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1 can black beans (drained and rinsed)
  • 1/2 cup corn (optional)
  • 1/4 cup chopped green onions
  • Sour cream, guacamole, or taco sauce for topping

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cook the ground beef in a large skillet over medium heat until browned. Drain excess fat.
  3. Add the taco seasoning and follow the package instructions (usually adding water and simmering for a few minutes).
  4. Stir in the black beans and corn (if using) until warmed through.
  5. Grease a 12-cup muffin tin or use muffin liners. Place one wonton wrapper in each cup, pressing it down to form a base.
  6. Add a small spoonful of taco meat into each wonton wrapper. Top with a bit of salsa and shredded cheese.
  7. Place a second wonton wrapper over the first layer, pressing down slightly. Add another layer of taco meat, salsa, and cheese.
  8. Bake in the oven for 15-20 minutes, until the wonton wrappers are crispy and the cheese is melted.
  9. Remove from the oven and let the taco cupcakes cool for a few minutes.
  10. Garnish with chopped green onions and your choice of sour cream, guacamole, or taco sauce.

These can be customized with different toppings or fillings, like jalapeños, olives, or different cheeses!
