Here’s a simple and delicious recipe for Chicken and Dumpling Casserole:

Ingredients:

For the Chicken Base:

  • 2 cups cooked chicken, shredded (rotisserie chicken works great)
  • 1 cup chicken broth
  • 1 cup milk
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 cup frozen mixed vegetables (optional)

For the Dumplings:

  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted

Instructions:

  1. Preheat the Oven:
    Preheat your oven to 350°F (175°C).
  2. Prepare the Chicken Base:
    • In a large mixing bowl, combine the shredded chicken, chicken broth, 1 cup of milk, and melted butter.
    • Stir in the cream of chicken soup, salt, pepper, garlic powder, and onion powder.
    • If you’re using frozen mixed vegetables, add them to the mixture.
    • Pour the chicken mixture into a 9×13-inch baking dish and spread it evenly.
  3. Make the Dumplings:
    • In another bowl, whisk together the flour, baking powder, and salt.
    • Add the milk and melted butter to the dry ingredients, and stir until just combined. The dough will be thick and sticky.
    • Drop spoonfuls of the dumpling batter over the chicken mixture in the baking dish. Try to space them out evenly.
  4. Bake:
    • Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
    • After 30 minutes, remove the foil and bake for an additional 10-15 minutes, or until the dumplings are golden brown and cooked through.
  5. Serve:
    • Allow the casserole to cool for a few minutes before serving. This will help it set and make it easier to scoop out.
