Garlic Butter Pork Chops with Cheesy Potato Bake is a comforting and flavorful dish that combines juicy, tender pork chops with a rich, cheesy potato bake. Here’s a recipe you can try:

Ingredients:

For the Garlic Butter Pork Chops:

  • 4 boneless pork chops (about 1 inch thick)
  • 4 cloves garlic, minced
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme (or fresh thyme)
  • 1 teaspoon dried rosemary (or fresh rosemary)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

For the Cheesy Potato Bake:

  • 4 large potatoes, thinly sliced
  • 1 ½ cups shredded cheddar cheese (or a mix of cheeses)
  • 1 cup heavy cream
  • 1 cup milk
  • 2 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • Salt and pepper to taste
  • Fresh chives or parsley, chopped (for garnish)

Instructions:

Cheesy Potato Bake:

  1. Preheat your oven to 375°F (190°C).
  2. Grease a baking dish with butter.
  3. In a saucepan, combine the milk, heavy cream, minced garlic, salt, and pepper. Heat until just warm, but not boiling.
  4. Layer half of the sliced potatoes in the prepared baking dish. Season with salt and pepper.
  5. Pour half of the cream mixture over the potatoes, then sprinkle with half of the shredded cheese.
  6. Add the remaining potatoes on top, pour over the remaining cream mixture, and top with the remaining cheese.
  7. Dot the top with small pieces of butter and cover with aluminum foil.
  8. Bake for about 45 minutes. Then, remove the foil and bake for an additional 15-20 minutes, until the potatoes are tender and the top is golden and bubbly.
  9. Garnish with chopped chives or parsley before serving.

Garlic Butter Pork Chops:

  1. While the potato bake is cooking, season the pork chops with salt, pepper, thyme, and rosemary.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the pork chops and sear for 3-4 minutes on each side until golden brown.
  3. Reduce the heat to medium, then add the butter and minced garlic to the skillet.
  4. Cook for another 5-7 minutes, basting the pork chops with the garlic butter, until they are fully cooked (internal temperature should reach 145°F or 63°C).
  5. Remove from the heat and let the pork chops rest for a few minutes.
  6. Garnish with fresh parsley before serving.

Serve the garlic butter pork chops alongside a generous helping of the cheesy potato bake. Enjoy this hearty and satisfying meal!
