Ingredients:
- 2 cups cooked rice (preferably chilled or day-old)
- 2 tbsp vegetable oil
- 2 eggs (beaten)
- 1 small onion (finely chopped)
- 2 cloves garlic (minced)
- 1/2 cup frozen peas and carrots (thawed)
- 1/2 cup cooked chicken, shrimp, or tofu (optional)
- 3 tbsp soy sauce
- 1 tbsp oyster sauce (optional)
- 1 tsp sesame oil
- Salt and pepper to taste
- 2 green onions (sliced)
- 1 tsp grated ginger (optional)
- 1 tbsp chili sauce or sriracha (optional for spice)
Instructions:
- Prepare the Rice: If using freshly cooked rice, spread it out on a baking sheet to cool down. It’s best to use cold, leftover rice as it prevents the fried rice from becoming mushy.
- Cook the Eggs: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the beaten eggs and scramble until fully cooked. Remove the eggs from the skillet and set them aside.
