Fried Rice

Here’s a simple and delicious fried rice recipe that you can easily make at home:

Ingredients:

  • 2 cups cooked rice (preferably chilled or day-old)
  • 2 tbsp vegetable oil
  • 2 eggs (beaten)
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1/2 cup frozen peas and carrots (thawed)
  • 1/2 cup cooked chicken, shrimp, or tofu (optional)
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce (optional)
  • 1 tsp sesame oil
  • Salt and pepper to taste
  • 2 green onions (sliced)
  • 1 tsp grated ginger (optional)
  • 1 tbsp chili sauce or sriracha (optional for spice)

Instructions:

  1. Prepare the Rice: If using freshly cooked rice, spread it out on a baking sheet to cool down. It’s best to use cold, leftover rice as it prevents the fried rice from becoming mushy.
  2. Cook the Eggs: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the beaten eggs and scramble until fully cooked. Remove the eggs from the skillet and set them aside.
  3. Sauté Vegetables: In the same skillet, add the remaining tablespoon of oil. Sauté the chopped onions and garlic until fragrant and translucent, about 2-3 minutes.
  4. Add Protein and Vegetables: If using, add cooked chicken, shrimp, or tofu to the skillet. Stir in the thawed peas and carrots, and cook for another 2-3 minutes.
  5. Add Rice: Add the cooked rice to the skillet, breaking up any clumps with the back of your spoon. Stir well to combine everything.
  6. Season: Pour in the soy sauce, oyster sauce (if using), and sesame oil. Stir everything together until the rice is evenly coated with the sauce. Season with salt and pepper to taste.
  7. Add Eggs and Green Onions: Add the scrambled eggs back into the skillet, along with the sliced green onions. Stir everything together for another minute or two.
  8. Finish and Serve: If you like a bit of spice, add a tablespoon of chili sauce or sriracha. Mix well and serve hot.
