Tiramisu Pudding Cups

Here’s a simple and delicious recipe for Tiramisu Pudding Cups, a delightful twist on the classic Italian dessert.

Ingredients:

  • For the Pudding:
    • 1 cup heavy cream
    • 1 cup whole milk
    • 1/2 cup granulated sugar
    • 4 large egg yolks
    • 3 tablespoons cornstarch
    • 1 teaspoon vanilla extract
    • 1/4 cup mascarpone cheese
  • For the Coffee Soak:
    • 1/2 cup strong brewed coffee, cooled
    • 2 tablespoons coffee liqueur (optional)
  • For Assembly:
    • 12-15 ladyfinger cookies, broken into pieces
    • Cocoa powder, for dusting
    • Dark chocolate shavings, for garnish (optional)
    • Whipped cream, for topping (optional)

Instructions:

1. Prepare the Pudding:

  1. In a medium saucepan, combine the heavy cream, whole milk, and sugar. Cook over medium heat until the mixture is hot but not boiling.
  2. In a separate bowl, whisk together the egg yolks and cornstarch until smooth.
  3. Gradually pour the hot milk mixture into the egg yolk mixture, whisking constantly to avoid curdling.
  4. Return the mixture to the saucepan and cook over medium heat, stirring constantly until it thickens and starts to bubble.
  5. Remove from heat, stir in the vanilla extract and mascarpone cheese until smooth.
  6. Let the pudding cool slightly, then cover with plastic wrap directly on the surface to prevent a skin from forming. Refrigerate until completely cool.

2. Prepare the Coffee Soak:

  1. In a shallow dish, mix the brewed coffee with the coffee liqueur (if using). Set aside.

3. Assemble the Pudding Cups:

  1. In small dessert cups or glasses, add a layer of ladyfinger pieces at the bottom.
  2. Drizzle a tablespoon or two of the coffee soak over the ladyfingers to moisten them.
  3. Spoon a layer of the cooled pudding over the soaked ladyfingers.
  4. Repeat the layers until the cups are filled, ending with a layer of pudding on top.
  5. Dust the top with cocoa powder and garnish with dark chocolate shavings if desired.

4. Chill and Serve:

  1. Refrigerate the assembled pudding cups for at least 2 hours to allow the flavors to meld.
  2. Before serving, add a dollop of whipped cream on top if desired.
