Carrot Pineapple Cake with Cream Cheese Glaze is a delightful dessert that combines the natural sweetness of carrots and the tropical tang of pineapple, topped off with a luscious cream cheese glaze. Here’s a recipe to make this delicious cake:

Ingredients:

For the Cake:

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1½ tsp baking soda
  • 1½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp ground ginger
  • ½ tsp salt
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 tsp vanilla extract
  • 2 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 1 cup chopped walnuts or pecans (optional)

For the Cream Cheese Glaze:

  • 4 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 2-3 tbsp milk (adjust for desired consistency)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or two 8-inch round cake pans.
  2. Mix Dry Ingredients:
    • In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  3. Prepare the Batter:
    • In a large bowl, beat the granulated sugar, brown sugar, and vegetable oil until well combined. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
    • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
    • Fold in the grated carrots, crushed pineapple, and chopped nuts (if using).
  4. Bake the Cake:
    • Pour the batter into the prepared pan(s). Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
    • Allow the cake to cool in the pan(s) for about 10 minutes, then transfer to a wire rack to cool completely.
  5. Prepare the Cream Cheese Glaze:
    • In a medium bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and continue to beat until creamy.
    • Stir in the vanilla extract and milk, adding milk one tablespoon at a time until the glaze reaches your desired consistency.
  6. Glaze the Cake:
    • Once the cake has cooled, drizzle the cream cheese glaze over the top. For a thicker glaze, you can spread it over the cake instead of drizzling.
  7. Serve and Enjoy:
    • Slice and serve the cake. Enjoy the moist, flavorful combination of carrot, pineapple, and the tangy sweetness of the cream cheese glaze.
