Sweet Potato Pie

ere’s a classic Sweet Potato Pie recipe for you:

Ingredients:

  • 2 cups mashed sweet potatoes (about 2 large sweet potatoes)
  • 1 ¼ cups granulated sugar
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • ¾ cup evaporated milk
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger (optional)
  • ¼ teaspoon salt
  • 1 unbaked 9-inch pie crust

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the sweet potatoes:
    • Peel and cut the sweet potatoes into chunks.
    • Boil them in a large pot until tender (about 20-25 minutes).
    • Drain and mash until smooth.
  3. Mix the filling:
    • In a large bowl, combine the mashed sweet potatoes and melted butter. Mix well.
    • Add the sugar, eggs, evaporated milk, vanilla extract, cinnamon, nutmeg, ginger (if using), and salt. Beat until smooth.
  4. Assemble the pie:
    • Pour the sweet potato mixture into the unbaked pie crust.
    • Smooth the top with a spatula.
  5. Bake the pie:
    • Place the pie in the preheated oven and bake for 55-60 minutes, or until a knife inserted in the center comes out clean.
    • If the edges of the crust start to brown too quickly, cover them with aluminum foil.
  6. Cool and serve:
    • Allow the pie to cool completely before slicing.
    • Serve with whipped cream, if desired.
