Crispy Cheesy Potato Stacks

Crispy Cheesy Potato Stacks are a delicious and visually appealing side dish. Here’s a simple recipe to make them:

Ingredients

  • 3-4 large potatoes (Yukon Gold or Russet are good choices)
  • 1 cup shredded cheese (Cheddar, Gruyère, or Parmesan work well)
  • 2-3 tablespoons melted butter
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme (or fresh thyme, finely chopped)
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Grease a muffin tin with cooking spray or butter.
  2. Prepare Potatoes: Wash and peel the potatoes. Slice them thinly using a mandoline or a sharp knife to ensure even thickness.
  3. Season Potatoes: In a large bowl, combine the sliced potatoes with melted butter, garlic powder, thyme, salt, and pepper. Toss to coat the potatoes evenly.
  4. Assemble Stacks: Layer the potato slices in each muffin cup, stacking them neatly. Sprinkle a little cheese between some of the layers as you stack the potatoes. Make sure to top each stack with a generous amount of cheese.
  5. Bake: Place the muffin tin in the preheated oven and bake for 45-55 minutes, or until the potatoes are tender and the tops are golden brown and crispy. Check by inserting a knife into the center of the stacks; it should go in easily.
  6. Serve: Allow the stacks to cool in the muffin tin for a few minutes before carefully removing them with a fork or small spatula. Garnish with fresh parsley if desired.
