Sure! Here’s a simple recipe for Creamy Baked Yogurt Bars:

Ingredients:

  • Crust:
    • 1 cup graham cracker crumbs
    • 1/4 cup melted butter
    • 2 tablespoons sugar
  • Filling:
    • 2 cups plain Greek yogurt
    • 1/2 cup honey or maple syrup
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 1 tablespoon lemon juice
    • 1 tablespoon cornstarch

Instructions:

  1. Preheat your oven:
    • Set your oven to 350°F (175°C).
  2. Prepare the crust:
    • In a medium bowl, mix the graham cracker crumbs, melted butter, and sugar until well combined.
    • Press the mixture evenly into the bottom of an 8×8 inch baking dish lined with parchment paper.
  3. Bake the crust:
    • Bake the crust for 8-10 minutes until it’s lightly golden. Remove from the oven and let it cool slightly.
  4. Make the filling:
    • In a large bowl, whisk together the Greek yogurt, honey or maple syrup, eggs, vanilla extract, lemon juice, and cornstarch until smooth and well combined.
  5. Assemble and bake:
    • Pour the yogurt mixture over the cooled crust, spreading it out evenly.
    • Bake in the preheated oven for 25-30 minutes, or until the edges are set and the center is slightly jiggly.
  6. Cool and chill:
    • Let the bars cool to room temperature, then refrigerate for at least 2 hours to set fully.
  7. Serve:
    • Once chilled, cut into bars and serve. You can top them with fresh fruit, a drizzle of honey, or a sprinkle of powdered sugar if desired.
