Chocolate fondant muffins

Here’s a recipe for delicious chocolate fondant muffins. These treats have a gooey, molten center that is sure to delight any chocolate lover.

Ingredients:

Muffins:

  • 200g dark chocolate (at least 70% cocoa)
  • 200g unsalted butter
  • 200g caster sugar
  • 4 large eggs
  • 100g plain flour
  • 2 tsp vanilla extract

Filling:

  • 100g dark chocolate (at least 70% cocoa)
  • 50ml double cream

Instructions:

1. Prepare the Filling:

  1. Melt the Chocolate and Cream:
    • In a small saucepan, heat the double cream until it just begins to simmer.
    • Remove from heat and add the dark chocolate, stirring until smooth.
    • Let it cool to room temperature and then refrigerate until firm.

2. Prepare the Muffin Batter:

  1. Preheat the Oven:
    • Preheat your oven to 180°C (350°F). Line a muffin tin with paper cases.
  2. Melt the Chocolate and Butter:
    • In a heatproof bowl set over a pot of simmering water, melt the dark chocolate and butter together. Remove from heat and let it cool slightly.
  3. Mix the Wet Ingredients:
    • In a large bowl, whisk together the eggs, caster sugar, and vanilla extract until pale and fluffy.
    • Gradually add the melted chocolate mixture, whisking constantly.
  4. Add the Dry Ingredients:
    • Sift in the plain flour and gently fold it into the batter until just combined.

3. Assemble the Muffins:

  1. Fill the Muffin Cases:
    • Spoon a little of the muffin batter into each paper case, filling them about halfway.
    • Add a spoonful of the chilled chocolate filling into the center of each muffin.
    • Cover the filling with more muffin batter until the cases are about three-quarters full.

4. Bake and Serve:

  1. Bake the Muffins:
    • Bake in the preheated oven for 12-15 minutes, or until the tops are firm but the centers are still soft.
  2. Cool and Enjoy:
    • Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
    • Serve warm for the best molten center effect.
