Cheesy Potato Cakes

Here’s a delicious and easy recipe for Cheesy Potato Cakes:

Ingredients:

  • 2 cups mashed potatoes (leftover mashed potatoes work great)
  • 1 cup shredded cheddar cheese (or your favorite cheese)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped green onions (optional)
  • 1/2 cup all-purpose flour
  • 1 large egg, beaten
  • Salt and pepper to taste
  • 1/4 teaspoon garlic powder (optional)
  • 1/4 teaspoon paprika (optional)
  • 2 tablespoons olive oil or butter for frying

Instructions:

  1. Prepare the Mixture:
    • In a large bowl, combine the mashed potatoes, shredded cheddar cheese, Parmesan cheese, and chopped green onions.
    • Add the beaten egg, flour, salt, pepper, garlic powder, and paprika. Mix well until all ingredients are fully combined.
  2. Form the Cakes:
    • Take a handful of the potato mixture and shape it into a small patty or cake. Repeat with the remaining mixture.
  3. Fry the Cakes:
    • Heat the olive oil or butter in a large skillet over medium heat.
    • Once the oil or butter is hot, add the potato cakes to the skillet. Be careful not to overcrowd the pan.
    • Cook the cakes for about 3-4 minutes on each side, or until they are golden brown and crispy.
  4. Serve:
    • Remove the cakes from the skillet and place them on a paper towel-lined plate to drain any excess oil.
    • Serve hot, garnished with extra green onions or a dollop of sour cream if desired.

Tips:

  • You can add other ingredients to the potato mixture like bacon bits, chopped herbs, or even a bit of finely chopped jalapeƱo for some heat.
  • If the mixture feels too wet, add a bit more flour. If it feels too dry, you can add a small amount of milk or an extra egg to bind the mixture together.
