Poppy Seed Roll Recipe

Ingredients

For the dough:

  • 4 cups all-purpose flour
  • 1 packet (2 1/4 tsp) active dry yeast

  • 1/2 cup sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 teaspoon salt

For the filling:

  • 1 cup poppy seeds
  • 1/2 cup sugar
  • 1/2 cup milk
  • 1 tablespoon honey
  • 1 teaspoon vanilla extract
  • 1/4 cup raisins (optional)
  • Zest of 1 lemon (optional)

For the glaze:

  • 1 cup powdered sugar
  • 2-3 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

1. Prepare the Dough:

  1. In a small bowl, dissolve the yeast in warm milk. Let it sit for about 5 minutes until it becomes frothy.
  2. In a large bowl, combine the flour, sugar, and salt.
  3. Add the melted butter, eggs, and yeast mixture to the dry ingredients. Mix until a dough forms.
  4. Knead the dough on a floured surface for about 8-10 minutes until it is smooth and elastic.
  5. Place the dough in a lightly greased bowl, cover with a clean cloth, and let it rise in a warm place for about 1-2 hours or until it has doubled in size.

2. Prepare the Filling:

  1. In a medium saucepan, combine the poppy seeds, sugar, milk, honey, and vanilla extract.
  2. Cook over medium heat, stirring frequently, until the mixture thickens (about 10-15 minutes).
  3. If using, add the raisins and lemon zest, and mix well.
  4. Let the filling cool completely before using.

3. Assemble the Rolls:

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Punch down the risen dough and roll it out on a floured surface into a rectangle about 1/4 inch thick.
  3. Spread the poppy seed filling evenly over the dough, leaving a small border around the edges.
  4. Starting from the longer side, roll the dough tightly into a log.
  5. Cut the log into slices, about 1 inch thick, and place them on the prepared baking sheet.
  6. Cover the rolls with a clean cloth and let them rise for another 30 minutes.

4. Bake the Rolls:

  1. Bake the rolls in the preheated oven for about 20-25 minutes, or until they are golden brown.

5. Prepare the Glaze:

  1. In a small bowl, mix the powdered sugar, milk, and vanilla extract until smooth.
  2. Drizzle the glaze over the warm rolls.
