Potatoes with zucchini

Here’s a simple and delicious recipe for potatoes with zucchini:

Ingredients:

  • 4 medium potatoes, peeled and diced
  • 2 medium zucchinis, sliced
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme (or fresh if available)
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese (optional)
  • Fresh parsley, chopped for garnish

Instructions:

  1. Prepare the Vegetables:
    • Peel and dice the potatoes into bite-sized pieces.
    • Slice the zucchinis into rounds or half-moons, depending on your preference.
    • Finely chop the onion and mince the garlic.
  2. Cook the Potatoes:
    • In a large pan, heat 1 tablespoon of olive oil over medium heat.
    • Add the diced potatoes and cook for about 10-12 minutes, stirring occasionally, until they start to become tender and golden brown.
  3. Add the Onions and Garlic:
    • Push the potatoes to the side of the pan and add another tablespoon of olive oil.
    • Add the chopped onion and garlic to the pan. Sauté for 2-3 minutes until the onions become translucent and the garlic is fragrant.
  4. Cook the Zucchini:
    • Add the sliced zucchini to the pan. Sprinkle with thyme, oregano, salt, and pepper.
    • Cook for another 7-10 minutes, stirring occasionally, until the zucchini is tender and the potatoes are fully cooked.
  5. Combine and Finish:
    • Stir everything together to combine the flavors.
    • If desired, sprinkle grated Parmesan cheese over the top and let it melt for a minute or two.
  6. Garnish and Serve:
    • Remove from heat and garnish with freshly chopped parsley.
    • Serve hot as a side dish or a light main course.
