Crab and Shrimp Stuffed Salmon

Ingredients

For the Stuffing:

  • 1/2 lb crab meat, picked over for shells
  • 1/2 lb shrimp, peeled, deveined, and chopped
  • 1/4 cup mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 2 green onions, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste

For the Salmon:

  • 4 salmon fillets (6-8 oz each)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Lemon slices for garnish
  • Fresh parsley for garnish

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Stuffing:
    • In a mixing bowl, combine the crab meat, chopped shrimp, mayonnaise, Parmesan cheese, breadcrumbs, green onions, garlic, lemon juice, and fresh parsley.
    • Season the mixture with salt and pepper to taste.
    • Mix everything together until well combined.
  3. Prepare the Salmon:
    • Place the salmon fillets on a cutting board.
    • Using a sharp knife, carefully cut a slit along the side of each salmon fillet to create a pocket for the stuffing. Be careful not to cut all the way through.
  4. Stuff the Salmon:
    • Stuff each salmon fillet with an equal amount of the crab and shrimp mixture, pressing the stuffing gently into the pocket.
  5. Cook the Salmon:
    • Heat the olive oil in an oven-safe skillet over medium-high heat.
    • Season the outside of the salmon fillets with salt and pepper.
    • Place the stuffed salmon fillets in the skillet, skin-side down if they have skin. Cook for about 3-4 minutes until the bottom is golden brown.
    • Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  6. Serve:
    • Remove the salmon from the oven and let it rest for a few minutes.
    • Garnish with lemon slices and fresh parsley.
    • Serve the stuffed salmon fillets with your choice of sides, such as roasted vegetables, rice, or a fresh salad.

Enjoy your delicious Crab and Shrimp Stuffed Salmon!
