Stuffed Cabbage Rolls

Ingredients:

For the Cabbage Rolls:

  • 1 large head of cabbage
  • 1 lb ground beef (can substitute with pork, turkey, or a mix)
  • 1 cup cooked rice
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 egg, lightly beaten
  • Salt and pepper to taste

For the Sauce:

  • 1 can (15 oz) tomato sauce
  • 1 can (15 oz) crushed tomatoes
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon sugar
  • 1 tablespoon vinegar (apple cider or white vinegar)
  • Salt and pepper to taste
  • Optional: 1 teaspoon dried oregano, basil, or thyme

Instructions:

  1. Prepare the Cabbage:
    • Remove the core from the cabbage.
    • Bring a large pot of water to a boil. Carefully add the cabbage and cook for about 5-10 minutes, until the leaves are softened and pliable.
    • Carefully peel off the leaves one at a time and set them aside to cool. Trim the thick vein from the center of each leaf.
  2. Prepare the Filling:
    • In a large bowl, combine the ground beef, cooked rice, chopped onion, minced garlic, egg, salt, and pepper. Mix well until everything is evenly distributed.
  3. Assemble the Rolls:
    • Lay a cabbage leaf on a flat surface. Place a spoonful of the meat mixture at the center of the leaf.
    • Fold the sides of the leaf over the filling and then roll it up from the thick end to the thin end, like a burrito. Repeat with the remaining leaves and filling.
  4. Prepare the Sauce:
    • In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and minced garlic and sauté until soft and translucent.
    • Add the tomato sauce, crushed tomatoes, sugar, vinegar, salt, pepper, and optional dried herbs. Stir well and bring to a simmer.
  5. Cook the Rolls:
    • Place the cabbage rolls seam-side down in the pot with the sauce. Layer them as needed, but try to keep them in a single layer as much as possible.
    • Spoon some of the sauce over the top of the rolls. Cover the pot and simmer on low heat for about 1 to 1.5 hours, until the meat is cooked through and the cabbage is tender.
  6. Serve:
    • Carefully remove the rolls from the pot and place them on a serving platter. Spoon some of the sauce over the top.
    • Serve hot with extra sauce on the side.
