Sure! Here’s a simple and delicious recipe for making Pot Roast in an Instant Pot:

Instant Pot Pot Roast

Ingredients:

  • 2-3 pounds chuck roast
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup red wine (optional)
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • 4 large carrots, cut into large pieces
  • 4 large potatoes, cut into large pieces
  • 2 celery stalks, chopped

Instructions:

  1. Prepare the Meat: Season the chuck roast generously with salt and pepper on all sides.
  2. Sear the Meat: Set the Instant Pot to ‘Sauté’ mode and add the olive oil. Once hot, sear the roast for about 4-5 minutes on each side until browned. Remove the roast and set aside.
  3. Sauté Vegetables: Add the chopped onion to the Instant Pot and sauté for 2-3 minutes until softened. Add the minced garlic and cook for another minute.
  4. Deglaze the Pot: Pour in the beef broth and red wine (if using) to deglaze the pot, scraping up any browned bits from the bottom.
  5. Add Seasonings: Stir in the tomato paste, Worcestershire sauce, thyme, rosemary, and bay leaves.
  6. Cook the Roast: Return the roast to the Instant Pot. Secure the lid, ensure the valve is set to ‘Sealing’, and set the Instant Pot to ‘Pressure Cook’ (or ‘Manual’) on high pressure for 60 minutes.
  7. Natural Release: Allow the Instant Pot to naturally release pressure for 10 minutes, then perform a quick release for any remaining pressure.
  8. Add Vegetables: Add the carrots, potatoes, and celery to the Instant Pot. Secure the lid again, set the valve to ‘Sealing’, and pressure cook on high for an additional 10 minutes.
  9. Final Release: Perform a quick release once the cooking time is complete.
  10. Serve: Remove the bay leaves. Transfer the roast and vegetables to a serving platter. Optionally, you can thicken the sauce by setting the Instant Pot to ‘Sauté’ mode and simmering the liquid until it reduces to your desired consistency.

Tips:

  • For extra flavor, marinate the roast in the seasonings and broth for a few hours or overnight before cooking.
  • Feel free to add other vegetables like mushrooms or parsnips according to your preference.
