Ingredients

For the Chicken:

  • 6 bone-in, skin-on chicken thighs
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil

For the Mushroom Cream Sauce:

  • 2 tablespoons butter
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 8 oz (225 g) mushrooms, sliced (you can use white, cremini, or a mix)
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • Salt and black pepper, to taste
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Prepare the Chicken:
    • Preheat your oven to 375°F (190°C).
    • Season the chicken thighs generously with salt and black pepper on both sides.
    • Heat the olive oil in a large oven-safe skillet over medium-high heat. Once the oil is hot, add the chicken thighs, skin side down. Cook for about 5-7 minutes, or until the skin is crispy and golden brown. Flip the chicken thighs and cook for another 2-3 minutes on the other side.
    • Transfer the skillet to the preheated oven and bake for about 20-25 minutes, or until the chicken is cooked through (internal temperature of 165°F or 74°C).
  2. Make the Mushroom Cream Sauce:
    1. While the chicken is baking, start the sauce. In a large pan, melt the butter over medium heat.
    2. Add the chopped onion and cook until softened, about 3-4 minutes.
    3. Add the minced garlic and sliced mushrooms, and cook until the mushrooms are tender and browned, about 5-7 minutes.
    4. Pour in the chicken broth and let it simmer for a few minutes, reducing slightly.
    5. Stir in the heavy cream, Parmesan cheese, and thyme. Let the sauce simmer gently, stirring occasionally, until it thickens, about 5-7 minutes. Season with salt and black pepper to taste.
  3. Combine and Serve:
    • Once the chicken thighs are cooked, remove them from the oven.
    • Add the cooked chicken thighs to the pan with the mushroom cream sauce, spooning some sauce over the top of the chicken.
    • Let everything simmer together for a few minutes to meld the flavors.
    • Garnish with chopped fresh parsley, if desired.
    • Serve the chicken thighs hot with the mushroom cream sauce over them. This dish pairs wonderfully with mashed potatoes, rice, or a simple green vegetable.
