Morning Glory Muffins

Morning Glory Muffins are a delightful breakfast treat packed with wholesome ingredients like carrots, apples, nuts, and spices. Here’s a basic recipe to make these delicious muffins:

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup shredded coconut
  • 1/2 cup chopped nuts (walnuts or pecans work well)
  • 1 cup grated carrots
  • 1/2 cup grated apple
  • 1/2 cup crushed pineapple (drained)
  • 1/2 cup raisins or dried cranberries
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with paper liners.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, salt, and cinnamon.
  3. Stir in the shredded coconut, chopped nuts, grated carrots, grated apple, crushed pineapple, and raisins or dried cranberries until evenly distributed.
  4. In a separate bowl, beat the eggs lightly. Stir in the vegetable oil and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; the batter should be slightly lumpy.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Allow the muffins to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.
