Beef and Cheese Empanadas

Sure! Here’s a simple recipe for beef and cheese empanadas:

Ingredients:

  • 1 pound ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or mozzarella works well)
  • 2 packages pre-made empanada dough (store-bought or homemade)
  • 1 egg, beaten (for egg wash)

Instructions:

  1. Prepare the Filling:
    • In a skillet over medium heat, cook the ground beef, breaking it apart with a spoon, until browned and cooked through.
    • Add the chopped onion and minced garlic to the skillet and cook until softened.
    • Stir in the ground cumin, paprika, salt, and pepper, and cook for another minute.
    • Remove from heat and let the filling cool slightly.
  2. Assemble the Empanadas:
    • Preheat your oven to 375°F (190°C).
    • Roll out the empanada dough on a lightly floured surface. Using a round cutter or a glass, cut out circles of dough, about 4-5 inches in diameter.
    • Place a spoonful of the beef filling in the center of each dough circle, leaving some space around the edges.
    • Sprinkle shredded cheese over the beef filling.
    • Fold the dough over the filling to create a half-moon shape. Press the edges together to seal, and crimp with a fork to make a decorative edge.
  3. Bake the Empanadas:
    • Place the assembled empanadas on a baking sheet lined with parchment paper.
    • Brush the tops of the empanadas with beaten egg to give them a golden color when baked.
    • Bake in the preheated oven for 20-25 minutes, or until the empanadas are golden brown and crispy.
  4. Serve and Enjoy:
    • Allow the empanadas to cool slightly before serving.
    • These empanadas can be served as appetizers, snacks, or as a main course with a side salad or rice.
