Jiffy Corn Casserole

Here’s a simple recipe for Jiffy Corn Casserole:

Ingredients:

  • 1 can (15.25 ounces) whole kernel corn, drained
  • 1 can (14.75 ounces) cream-style corn
  • 1 package (8.5 ounces) Jiffy corn muffin mix
  • 1 cup sour cream
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 cup shredded cheddar cheese (optional)
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a large mixing bowl, combine the whole kernel corn, cream-style corn, Jiffy corn muffin mix, sour cream, melted butter, and shredded cheddar cheese if using. Mix until well combined.
  3. Season the mixture with salt and pepper to taste.
  4. Pour the mixture into the prepared baking dish and spread it out evenly.
  5. Bake in the preheated oven for 45-50 minutes, or until the casserole is set and golden brown on top.
  6. Remove from the oven and let it cool for a few minutes before serving.
