Wet Burritos

Here’s a simple recipe for wet burritos:

Ingredients:

For the filling:

  • 1 pound ground beef or shredded cooked chicken
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup cooked rice
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 4 large flour tortillas

For the sauce:

  • 2 cups enchilada sauce (red or green)
  • 1 cup shredded cheese for topping
  • Optional toppings: sour cream, diced tomatoes, sliced olives, chopped cilantro

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef or chicken over medium heat until browned. Add the diced onion, garlic, and bell pepper, and cook until softened.
  3. Stir in the black beans, cooked rice, chili powder, cumin, salt, and pepper. Cook for another 5 minutes, allowing the flavors to meld together.
  4. Warm the flour tortillas in the microwave or on a skillet for a few seconds to make them pliable.
  5. Divide the filling evenly among the tortillas, placing it in the center of each tortilla. Sprinkle shredded cheese over the filling.
  6. Roll up the tortillas, folding in the sides as you go, to form burritos. Place them seam side down in a baking dish.
  7. Pour the enchilada sauce over the burritos, covering them generously.
  8. Sprinkle additional shredded cheese over the top of the sauce.
  9. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  10. Remove from the oven and let the burritos cool for a few minutes before serving.
  11. Garnish with your favorite toppings such as sour cream, diced tomatoes, sliced olives, and chopped cilantro.
  12. Serve hot and enjoy your delicious wet burritos!
