Here’s a simple recipe for wet burritos:
Ingredients:
For the filling:
- 1 pound ground beef or shredded cooked chicken
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup cooked rice
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
- 4 large flour tortillas
For the sauce:
- 2 cups enchilada sauce (red or green)
- 1 cup shredded cheese for topping
- Optional toppings: sour cream, diced tomatoes, sliced olives, chopped cilantro
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large skillet, cook the ground beef or chicken over medium heat until browned. Add the diced onion, garlic, and bell pepper, and cook until softened.
- Stir in the black beans, cooked rice, chili powder, cumin, salt, and pepper. Cook for another 5 minutes, allowing the flavors to meld together.
- Warm the flour tortillas in the microwave or on a skillet for a few seconds to make them pliable.
- Divide the filling evenly among the tortillas, placing it in the center of each tortilla. Sprinkle shredded cheese over the filling.
- Roll up the tortillas, folding in the sides as you go, to form burritos. Place them seam side down in a baking dish.
- Pour the enchilada sauce over the burritos, covering them generously.
- Sprinkle additional shredded cheese over the top of the sauce.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let the burritos cool for a few minutes before serving.
- Garnish with your favorite toppings such as sour cream, diced tomatoes, sliced olives, and chopped cilantro.
- Serve hot and enjoy your delicious wet burritos!
