Cheesy beefy rolls ups are a delicious snack or appetizer that combines the savory flavors of beef and cheese rolled up in a soft tortilla or pastry. Here’s a simple recipe to make cheesy beefy roll ups:

Ingredients:

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup diced onions
  • 1/4 cup diced green peppers
  • 1/4 cup diced black olives (optional)
  • 4 large flour tortillas
  • Cooking spray or oil for greasing

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, cook the ground beef until it’s browned and crumbled. Drain any excess fat.
  3. Add the taco seasoning to the cooked beef according to the instructions on the packet. Stir well to combine and let it simmer for a few minutes.
  4. Remove the skillet from the heat and let the beef mixture cool slightly.
  5. In a mixing bowl, combine the shredded cheese, diced tomatoes, onions, green peppers, and black olives if using.
  6. Lay out the flour tortillas on a clean surface. Divide the beef mixture evenly among the tortillas, spreading it out in a thin layer.
  7. Sprinkle the cheese and vegetable mixture evenly over the beef layer on each tortilla.
  8. Starting from one edge, tightly roll up each tortilla into a log shape.
  9. Place the rolled-up tortillas seam-side down on a baking sheet lined with parchment paper or lightly greased with cooking spray.
  10. Lightly spray or brush the tops of the tortilla rolls with a little more cooking spray or oil.
  11. Bake in the preheated oven for about 12-15 minutes, or until the tortillas are golden brown and crispy.
  12. Remove from the oven and let cool slightly before slicing the cheesy beefy roll ups into bite-sized pieces.
  13. Serve warm with your favorite dipping sauces such as salsa, sour cream, or guacamole.
