Making a cauliflower crust pizza that’s keto-friendly involves substituting traditional flour with cauliflower and using low-carb ingredients for the toppings. Here’s a basic recipe:

Ingredients:

For the cauliflower crust:

  • 1 medium head cauliflower, grated (about 4 cups)
  • 1 large egg
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

For the toppings (adjust to your preference):

  • Low-carb pizza sauce or tomato sauce (look for brands with no added sugar)
  • Shredded mozzarella cheese
  • Your choice of keto-friendly toppings such as pepperoni, cooked bacon, sliced mushrooms, bell peppers, olives, etc.

Instructions:

  1. Prepare the cauliflower crust:
    • Preheat your oven to 400°F (200°C).
    • Place the grated cauliflower in a microwave-safe bowl and microwave it on high for about 5-6 minutes, or until it’s soft.
    • Let the cauliflower cool slightly, then transfer it to a clean kitchen towel or cheesecloth. Squeeze out as much moisture as possible.
    • In a mixing bowl, combine the squeezed cauliflower, egg, shredded mozzarella, Parmesan cheese, oregano, garlic powder, salt, and pepper. Mix until everything is well combined.
    • Place the cauliflower mixture onto a parchment-lined baking sheet and spread it out into a circle, about 1/4 inch thick.
    • Bake the crust in the preheated oven for 20-25 minutes, or until it’s golden brown and set.
  2. Assemble the pizza:
    • Once the crust is baked, remove it from the oven and spread a thin layer of low-carb pizza sauce or tomato sauce over the crust.
    • Sprinkle shredded mozzarella cheese over the sauce, then add your desired toppings.
    • Return the pizza to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  3. Serve:
    • Once the pizza is done, let it cool for a few minutes before slicing.
    • Serve hot and enjoy your keto-friendly cauliflower crust pizza!

This recipe allows for a lot of customization, so feel free to experiment with different toppings and seasonings to suit your taste preferences.
