Mediterranean Pasta Salad is a delicious and refreshing dish that combines pasta with fresh vegetables, olives, cheese, and a tangy dressing. Here’s a simple recipe to make Mediterranean Pasta Salad:

Ingredients:

  • 8 ounces (225g) pasta (such as fusilli, penne, or farfalle)
  • 1 cup cherry tomatoes, halved
  • 1/2 English cucumber, diced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped

For the Dressing:

  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Allow it to cool completely.
  2. In a large mixing bowl, combine the cooked and cooled pasta, cherry tomatoes, cucumber, olives, red onion, feta cheese, and parsley.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, dried oregano, salt, and pepper to make the dressing.
  4. Pour the dressing over the pasta salad and toss until everything is evenly coated.
  5. Taste and adjust seasoning if necessary. You can add more salt, pepper, or vinegar according to your preference.
  6. Refrigerate the pasta salad for at least 30 minutes before serving to allow the flavors to meld together.
  7. Serve chilled as a side dish or add grilled chicken or shrimp to make it a complete meal.
