Traditional Greek braised beef, known as “Stifado,” is a hearty and flavorful dish that’s perfect for a comforting meal. Here’s a recipe for you:
Ingredients:
- 2 lbs (about 1 kg) beef stew meat, cut into cubes
- 4 tbsp olive oil
- 4 large onions, finely chopped
- 4 cloves garlic, minced
- 1 cup red wine
- 1/2 cup red wine vinegar
- 1/4 cup tomato paste
- 2 cups beef broth
- 2 bay leaves
- 1 cinnamon stick
- 1 tsp dried oregano
- 1/2 tsp ground cloves
- Salt and pepper to taste
- Optional: 1 lb small onions or shallots, peeled
- Optional: 1 lb small potatoes, peeled and halved
Instructions:
- Heat 2 tablespoons of olive oil in a large, heavy-bottomed pot over medium-high heat. Add the beef cubes in batches and brown them on all sides. Remove the beef from the pot and set aside.
- In the same pot, add the remaining 2 tablespoons of olive oil. Add the chopped onions and cook until they are soft and golden brown, about 8-10 minutes.
- Add the minced garlic to the pot and cook for another 1-2 minutes, until fragrant.
- Return the browned beef to the pot. Pour in the red wine and red wine vinegar, stirring to deglaze the bottom of the pot and scrape up any browned bits.
- Stir in the tomato paste until well combined.
- Add the beef broth, bay leaves, cinnamon stick, dried oregano, ground cloves, salt, and pepper to the pot. If using, add the small onions or shallots and potatoes.
- Bring the mixture to a simmer, then reduce the heat to low. Cover the pot and let it simmer gently for 2-3 hours, or until the beef is tender and the sauce has thickened.
- Check the seasoning and adjust salt and pepper if necessary.
- Serve the Greek braised beef hot, garnished with fresh parsley if desired. It’s traditionally served with crusty bread or over rice or mashed potatoes.
