Sure, here’s a recipe for a healthy lemon slice:

Ingredients:

For the base:

  • 1 cup almonds
  • 1 cup pitted dates
  • 1 tablespoon coconut oil
  • Zest of 1 lemon

For the lemon filling:

  • 1 cup cashews (soaked for at least 4 hours or overnight)
  • Juice of 3-4 lemons
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup or honey
  • Zest of 1 lemon
  • Pinch of salt

Instructions:

  1. Begin by soaking the cashews in water for at least 4 hours or overnight. This will help them blend smoothly.
  2. To make the base, place almonds in a food processor and pulse until finely ground. Add dates, coconut oil, and lemon zest. Pulse until the mixture sticks together when pressed between your fingers.
  3. Press the mixture firmly into the bottom of a lined baking dish or cake tin. Place it in the freezer while you prepare the filling.
  4. For the lemon filling, drain and rinse the soaked cashews. Place them in a blender along with lemon juice, melted coconut oil, maple syrup or honey, lemon zest, and a pinch of salt. Blend until smooth and creamy.
  5. Pour the lemon filling over the prepared base and spread it out evenly with a spatula.
  6. Place the lemon slice in the freezer to set for at least 4 hours or until firm.
  7. Once set, remove the lemon slice from the freezer and let it sit at room temperature for a few minutes before slicing into squares or bars.
  8. Serve chilled and enjoy your healthy lemon slice!
