Tiramisu Chia Pudding is a delightful twist on the classic Italian dessert, Tiramisu. It combines the flavors of coffee, cocoa, and creamy mascarpone cheese with the health benefits of chia seeds. Here’s a simple recipe to make Tiramisu Chia Pudding:

Ingredients:

  • 1/4 cup chia seeds
  • 1 cup brewed coffee, cooled
  • 1 cup milk (dairy or non-dairy)
  • 2 tablespoons cocoa powder
  • 2 tablespoons maple syrup or sweetener of your choice
  • 1/2 teaspoon vanilla extract
  • 1/2 cup mascarpone cheese (or substitute with Greek yogurt for a lighter version)
  • Ladyfinger cookies, for garnish (optional)
  • Cocoa powder, for dusting (optional)

Instructions:

  1. Prepare the Chia Pudding Base:
    • In a mixing bowl, combine chia seeds, brewed coffee, milk, cocoa powder, maple syrup, and vanilla extract. Whisk until well combined.
    • Cover the bowl and refrigerate for at least 2 hours or overnight, allowing the chia seeds to absorb the liquid and thicken.
  2. Assemble the Tiramisu Chia Pudding:
    • Once the chia pudding has thickened, take it out of the refrigerator.
    • Stir in the mascarpone cheese until fully incorporated into the pudding mixture.
  3. Serve:
    • Divide the Tiramisu Chia Pudding into serving glasses or bowls.
    • Optionally, garnish with ladyfinger cookies by placing them on top of the pudding or crumbling them over the pudding.
    • Dust the top with cocoa powder for an extra touch of Tiramisu flavor.
    • Serve chilled and enjoy!
