Green Lentil, Beetroot, and Feta Salad

Green Lentil, Beetroot, and Feta Salad Recipe:

Ingredients:

  • 1 cup green lentils
  • 2 medium-sized beetroots, cooked and diced
  • 100g feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley or mint leaves for garnish (optional)

Instructions:

  1. Cook the green lentils according to package instructions until tender. Drain and let them cool.
  2. In a large mixing bowl, combine the cooked green lentils, diced beetroots, and crumbled feta cheese.
  3. In a small bowl, whisk together the olive oil, balsamic vinegar, lemon juice, salt, and pepper to make the dressing.
  4. Pour the dressing over the lentil mixture and toss gently until everything is evenly coated.
  5. Taste and adjust seasoning if necessary.
  6. Garnish with fresh parsley or mint leaves if desired.
  7. Serve immediately or refrigerate until ready to serve. Enjoy your nutritious and flavorful green lentil, beetroot, and feta salad!
