Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 cups sliced mushrooms
  • 2 cups fresh spinach
  • 4 oz cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Toothpicks or kitchen twine

Instructions:

  1. Prepare the filling:
    • Heat olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant.
    • Add sliced mushrooms to the skillet and cook until they release their moisture and become tender.
    • Stir in fresh spinach and cook until wilted. Remove from heat and let it cool slightly.
    • In a bowl, mix together the softened cream cheese and grated Parmesan cheese. Add the cooked mushroom and spinach mixture to the bowl. Season with salt and pepper. Mix well to combine.
  2. Prepare the chicken breasts:
    • Preheat your oven to 375°F (190°C).
    • Place each chicken breast between two sheets of plastic wrap or parchment paper. Pound them gently to an even thickness using a meat mallet or rolling pin. This will make it easier to stuff and roll.
    • Season each chicken breast with salt and pepper.
  3. Stuff and roll the chicken breasts:
    • Spread a generous amount of the mushroom and spinach filling onto each chicken breast.
    • Roll up each chicken breast tightly, securing the seams with toothpicks or kitchen twine.
  4. Cook the stuffed chicken:
    • Heat a tablespoon of olive oil in an oven-safe skillet over medium-high heat.
    • Place the stuffed chicken breasts seam-side down in the skillet and cook for 2-3 minutes on each side until golden brown.
    • Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  5. Serve:
    • Remove the stuffed chicken breasts from the oven and let them rest for a few minutes before slicing.
    • Serve the creamy mushroom and spinach stuffed chicken hot, garnished with fresh herbs if desired. Enjoy!
