Almond Flour Pumpkin Bread

Almond flour pumpkin bread is a delicious and nutritious treat that’s perfect for autumn or any time of the year. Here’s a basic recipe to get you started:

Ingredients:

  • 1 1/2 cups almond flour
  • 1/2 cup coconut flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 3/4 cup pumpkin puree
  • 1/2 cup maple syrup or honey
  • 1/4 cup melted coconut oil or butter
  • 3 large eggs
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line it with parchment paper.
  2. In a large bowl, whisk together the almond flour, coconut flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves until well combined.
  3. In another bowl, mix together the pumpkin puree, maple syrup or honey, melted coconut oil or butter, eggs, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  5. Pour the batter into the prepared loaf pan and spread it out evenly.
  6. Bake in the preheated oven for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.
  8. Serve slices of almond flour pumpkin bread plain or with your favorite toppings, such as whipped cream or a drizzle of maple syrup.
