vegan German chocolate cake

Sure! Here’s a recipe for a vegan German chocolate cake:

Ingredients:

For the cake:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups non-dairy milk (such as almond, soy, or coconut)
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 tablespoon apple cider vinegar

For the coconut-pecan frosting:

  • 1 cup full-fat coconut milk
  • 1 cup brown sugar
  • 1/3 cup vegan butter
  • 1 teaspoon vanilla extract
  • 2 cups shredded coconut
  • 1 cup chopped pecans

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
  2. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
  3. In a separate bowl, mix together the non-dairy milk, vegetable oil, vanilla extract, and apple cider vinegar.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
  5. Divide the batter evenly between the prepared cake pans and smooth the tops with a spatula.
  6. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  7. While the cakes are baking, prepare the frosting. In a saucepan, combine the coconut milk, brown sugar, and vegan butter. Cook over medium heat, stirring constantly, until the mixture begins to boil.
  8. Reduce the heat to low and continue to cook, stirring occasionally, for about 5 minutes, until the mixture thickens slightly.
  9. Remove the saucepan from the heat and stir in the vanilla extract, shredded coconut, and chopped pecans.
  10. Allow the frosting to cool completely before using it to frost the cake.
  11. Once the cakes have cooled, carefully remove them from the pans and place one layer on a serving plate or cake stand.
  12. Spread a thick layer of the coconut-pecan frosting over the top of the first cake layer.
  13. Place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.
  14. Slice and serve your vegan German chocolate cake, and enjoy!
