Tuna Melt Stuffed Bell Peppers

Tuna melt stuffed bell peppers are a delicious and nutritious twist on the classic tuna melt sandwich. Here’s a simple recipe to make them:

Ingredients:

  • 4 large bell peppers (any color), halved and seeds removed
  • 2 cans (5 ounces each) of tuna, drained
  • 1/4 cup mayonnaise
  • 1/4 cup diced red onion
  • 1/4 cup diced celery
  • 1/4 cup diced pickles or relish
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the drained tuna, mayonnaise, diced red onion, diced celery, diced pickles or relish, lemon juice, Dijon mustard, garlic powder, salt, and pepper. Mix well until everything is evenly combined.
  3. Place the bell pepper halves in a baking dish, cut side up.
  4. Spoon the tuna mixture evenly into each bell pepper half.
  5. Sprinkle shredded cheddar cheese over the top of each stuffed pepper.
  6. Cover the baking dish with aluminum foil and bake in the preheated oven for about 25-30 minutes, or until the peppers are tender and the cheese is melted and bubbly.
  7. Remove the foil and broil for an additional 2-3 minutes until the cheese is golden brown and bubbly.
  8. Serve the tuna melt stuffed bell peppers hot, garnished with chopped fresh parsley or green onions if desired.
