Here’s a simple recipe for Sweet Hawaiian Crockpot Chicken:

Ingredients:

  • 4-6 boneless, skinless chicken breasts
  • 1 cup pineapple juice
  • 1/2 cup brown sugar
  • 1/3 cup soy sauce
  • 1/4 cup honey
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, minced (optional)
  • 1/4 teaspoon black pepper
  • 1 can (20 oz) pineapple chunks, drained
  • 2 tablespoons cornstarch (optional, for thickening)
  • 2 tablespoons water (optional, for thickening)
  • Cooked rice, for serving
  • Green onions, chopped (for garnish, optional)
  • Sesame seeds (for garnish, optional)

Instructions:

  1. Place chicken breasts in the bottom of your crockpot.
  2. In a mixing bowl, whisk together pineapple juice, brown sugar, soy sauce, honey, garlic, ginger, and black pepper until well combined.
  3. Pour the sauce mixture over the chicken in the crockpot.
  4. Add drained pineapple chunks on top of the chicken and sauce.
  5. Cover and cook on low for 4-6 hours or on high for 2-3 hours, or until the chicken is cooked through and tender.
  6. If desired, you can thicken the sauce before serving: In a small bowl, mix cornstarch and water until smooth, then stir the mixture into the crockpot. Let it cook for an additional 15-20 minutes on high until the sauce thickens.
  7. Serve the Sweet Hawaiian Crockpot Chicken over cooked rice, spooning some sauce and pineapple chunks over the top.
  8. Garnish with chopped green onions and sesame seeds if desired.
