Certainly! Here’s a recipe for vegan butter chicken, which replaces the traditional chicken with plant-based ingredients:

Ingredients:

For the “Chicken” Marinade:

  • 1 block of extra-firm tofu, pressed and cubed
  • 1 cup plain vegan yogurt
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • Salt and pepper to taste

For the Sauce:

  • 2 tablespoons vegan butter or coconut oil
  • 1 large onion, finely chopped
  • 3 tomatoes, pureed
  • 1/2 cup cashews, soaked in water for 2 hours
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon ground turmeric
  • 1 teaspoon garam masala
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon chili powder (adjust to taste)
  • 1 cup coconut milk
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions:

  1. Marinate the “Chicken”:
    • In a bowl, mix together the vegan yogurt, ginger-garlic paste, turmeric powder, garam masala, cumin powder, coriander powder, salt, and pepper.
    • Add the cubed tofu to the marinade, making sure each piece is well coated.
    • Allow the tofu to marinate for at least 30 minutes.
  2. Prepare the Sauce:
    • In a blender, combine the soaked cashews and tomato puree. Blend until smooth.
    • In a large pan, melt vegan butter or coconut oil over medium heat.
    • Add chopped onions and sauté until golden brown.
    • Add ginger-garlic paste and cook for another 1-2 minutes until the raw smell disappears.
    • Stir in turmeric, garam masala, cumin powder, coriander powder, and chili powder. Cook for 1-2 minutes.
    • Pour in the cashew-tomato puree and cook until the mixture thickens.
  3. Cook the “Chicken”:
    • Add the marinated tofu pieces to the sauce. Mix well and let it simmer for 10-15 minutes, allowing the flavors to meld.
  4. Finish the Dish:
    • Pour in the coconut milk, stirring continuously.
    • Season with salt and pepper to taste.
    • Simmer for an additional 5-10 minutes until the sauce reaches your desired consistency.
  5. Serve:
    • Garnish with fresh cilantro and serve the vegan butter chicken over rice or with your favorite vegan naan.
