  • 1 cup grated zucchini
  • 1/2 cup grated carrot
  • 1/2 cup vegetable oil or melted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/2 cup chopped nuts (optional)
  • 1/2 cup raisins or shredded coconut (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a standard-sized loaf pan.
  2. In a large mixing bowl, combine the grated zucchini, grated carrot, oil or melted butter, sugar, eggs, and vanilla extract. Mix well until the ingredients are evenly combined.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
